Taco Style Beans and Lentils

This recipe is very yummy!  Lentils are high in iron (many people with celiac have anemia) so it is a good recipe for celiac’s to try.  Plus it is vegetarian and has lots of nutrients. I don’t usually like lentils, but this is a great way to make them tasty. I use it instead of a meat filling in tacos or any other Mexican dish. 

For this recipe I used the lentil/bean mix from costco.  You could also use plain lentils, but I like the mix. 

Ingredients:

1/2 cup of brown rice

1 cup of dry lentil mix/bean mix

4 cups of water or vegetable stock (for extra flavour)

3 tsp. chili powder

1/4 tsp cumin

1 tsp garlic powder

1 tsp taco spice (or more to taste-I like to add more)-make sure the taco spice is gluten free

Put the water in a pot and bring to a boil.  Add the spices, lentil mix and brown rice.  After ten minutes bring the water back down to a simmer and let it cook for 30-45 minutes (keep checking on how much water is left every once and awhile).  When the water is all absorbed it should be finished cooking. 

We eat them inside of tortillas with yogurt, cooked onions and peppers, lettuce, salsa and cheese.  Very yummy!
