Cajun Quinoa

I invented a new quinoa recipe today that I thought might be yummy and to my surprise it was! Here is the recipe:

Ingredients:

Quinoa (1 cup)

Chicken Stock (2 cups)

3 tbsp cajun seasoning (I use club house-I called them and it is GF)

1/2 cup of cut up leek or green onion

1 can of Kidney beans (drained)

I first measure the cup of quinoa and throw it in the rice maker. Then you need to add the 2 cups of chicken stock and cajun and let the mixture cook.

When the quinoa is finished cooking, add 1 tbsp. of oil and sprinkle extra cajun on to taste. Throw the cut up leek/green onion and kidney beans in the quinoa to warm through. Serve warm.
