Quinoa Edamame Protein Salad

Here is a recipe for a protein rich salad that is super tasty!

10 cups spinach (raw)
1-2 red peppers (cut up)
1 whole cucumber cut up
1/2 cup pitted kalamata olives
1 cup of cherry tomatoes (or more)
2 cups of cooked red quinoa
1 cup of roasted edamame beans (crunchy)

Dressing:
1/2 cup of veganese (grapeseed flavour)
4 tbsp. lemon juice
2 tbsp. oregano
salt and pepper to taste

Mix all salad ingredients together. Mix dressing and add to salad, serve.
