Fall Pumpkin Cookies


I know it is still technically summer, but I am starting to get excited about Fall. Maybe it is because the rain feels cozy today and I am enjoying baking and cooking in my home. I used to dread when summer would end, but this year I am celebrating the start of a new season.

Today I tried a new recipe out (Fall Pumpkin Cookies):

3 cups of GF oats
1/2 cup Sorghum flour
1 regular sized can of pumpkin
1/2 cup xylitol
1 tbsp cinnamon
1 tsp nutmeg
3 tbsp pumpkin protein powder (or ground pumpkin seeds)
1 tbsp ground chia seed
1 tbsp baking powder

This is a super easy and forgiving recipe. I threw everything in one bowl and mixed it with my hands. I put in a 400 degree oven for around 20 minutes. Check them to see if the bottoms are light brown.
