I know it has been a long time since I have posted as I have been deciding what I want to do with this blog. I enjoy posting recipes, but I have also been putting together a cookbook lately and deciding which ones I want to post and which ones I want to keep for the book has been a challenge.
I have also started to plan a trip for Spring break this year that will include Disney World and a Caribbean cruise. It seems like life has become very busy and I know I need to slow down a little bit over the next while.
Due to my diet changes and hard work, over the last 5 years I have lost a grand total of 227 pounds! I know, that is equivalent in weight of a large man, which terrifies me to think about, but I am also very proud of myself that I have accomplished this task. As a part of my weight loss journey I had a major surgery this past week that removed some excess skin from my stomach that was causing problems and infections. It has been a hard week physically and emotionally. The results of my surgery weren’t 100 percent what I expected and I am also not very far into recovery (1/4 of the way in). I know that this is part of my weight loss journey, but this part for me was a lot more difficult than losing the weight with diet and exercise.
