Black Eyed Pea Burgers

These are the yummiest veggie burger/sauce mix I have had! I found the recipe from another site, but changed it a bit to adapt to what I like.

For the Burgers:

3 cups black eyed peas (cooked)
2 tbsp. ground flax
2 cups of cooked brown rice
1 bell pepper
1 small onion
4 tbsp. fresh parsley
2 tsp dried thyme
2 tsp dried mustard
3 dashes of Siracha
2 tsp braggs liquid aminos or gf soy sauce
1 cup chickpea flour

Add all ingredients together in a bowl and mix together. Cool in the fridge for one hour. Then cook until browned and crisp in a pan.

Mississippi Sauce:

1/4 cup chopped onion
2 cloves garlic
1/4 cup vegan mayo
2 tbsp. ketchup
1 tbsp. Dijon
1 tbsp. siracha
1 tbsp. vegan soy sauce
1 tbsp. lemon juice
1 tsp. prepared yellow mustard

Mix all together and put in the fridge to cool. Put on top of heated burgers.
