I know the picture doesn’t look amazing, but this soup is ridiculously good and tastes like cheesy goodness.
1 1/2 heads of cauliflower
5 cloves of garlic
1 cup of herb flavoured veggie stock (check that it is gluten free)
1 cup of nutritional yeast
1/2 block of daiya cheese (block is best for this recipe)
1 can of white beans
Cut up the cauliflower and peel the garlic and throw in a pot with water and boil until soft.
Drain the water and make 6 cups of veggie stock with the veggie cube. While this is heating, add cauliflower and garlic combo to the water. Use immersion blender and blend until completely smooth. Add in nutritional yeast and whisk together. Grate the daiya and add in until it melts in with the soup. Add salt and pepper to taste. Add in the white beans and puree again with the immersion blender.
What is nutritional yeast? You can buy this at any health food store. It is an amazing source of protein and tastes very cheesey. It is lower calorie and very healthy (also a source of B vitamins).
