Ninja Bowl


This week I was stuck for dinner ideas and decided to throw a bunch of stuff together. This time of year I crave lots of salads, but I was getting bored of the typical ones that I make. I started by throwing on a pot of wild rice and went on from this point.

I ended up grating raw beets and cutting up red peppers and avocado. Lastly I opened a can of kidney beans and lightly salted them. Typically I rehydrate my own beans, but I wasn’t wanting to spend the time doing it. When the rice was finished I piled the raw beet shreds on top along with the cucumber, peppers, and thinly sliced avocado.

For the dressing, I blended a few tablespoons of tahini with a few tablespoons of coconut aminos (or soy sauce-gluten free of course), with a few tbsp of lemon juice. It turns into a creamy asian style dressing.

This recipe is so good I have already made it a second time since. Lots of healthy vegetables and a good amount of protein. Enjoy!
