Quinoa is all the rage right now, but make sure you buy fair trade and organic if possible. I enjoy quinoa cold thrown in salads, hot as cereal or thrown into bean patties to stick them together. Here is one recipe that I love.
1 3/4 cup quinoa (cooked)
1 can of chickpeas
2 cups frozen spinach
2 tbsp nutritional yeast
1 tbsp flax seed
2 tsp italian spice
2 tbsp oil
1) Defrost the spinach
2)Add beans to spinach and mash until mostly mush
3) Add all other ingredients except the oil
4) Form patties in your hand and place in a frying pan with the oil. Cook about 5-7 minutes on each side or until browned. They also work well in the oven.
